Fresh Basil Leaves: You will need 1 cup of tightly packed fresh basil. This gives the pesto that classic flavour we’re all looking for in a pesto
Raw walnuts: I like using walnuts instead of pine nuts in my pesto’s, I like the nutty flavour it gives off and you get the added bonus of all the amazing omega-3 fatty acid benefits!
Extra Virgin Olive Oil: Make sure you get yourself a good quality olive oil, it truly does make a difference not only in taste but in nutritional properties as well. Look for: extra virgin, cold-pressed in a dark coloured glass bottle. This ensures optimal freshness.
Parmigiano-reggiano Cheese: This is another important ingredient in this pesto, because duh- cheese. I really like to use a good quality parmesan in mine but you can also use regular parmesan. I buy mine from Costco, you get a HUGE chunk for around $20.00 and it lasts me a few months!
Fresh Garlic: Garlic is a must for me in just about any savoury dish, it adds such a punch of flavour to anything. I like to use a good amount in mine, but you can change the number of cloves depending on your tolerance and taste.
Lemon juice: Don’t skip the lemon! The lemon juice adds just the right amount of brightness to this pesto. Lemon also acts as a natural preservative, to keep it fresh a little longer.
Salt and Pepper: S&P just boost the flavour of everything else in this sauce. The amount can really be up to you, make sure you are tasting your pesto as you go!
